Chef Beth Fisher has a career marked by a rich tapestry of culinary expertise and teaching experience. Having cooked in esteemed Twin Cities restaurants like Lucia’s, Wise Acre Eatery, and Kruse Markit, Beth has brought a wealth of experience to her role as Culinary Program Lead at the University of Minnesota Landscape Arboretum’s Farm at the Arb.

When Beth started her role at the Arb last year, she was no stranger to a kitchen classroom. As the previous Culinary Programmer and Instructor at the Myer’s Education Center, she crafted whimsical and dynamic culinary classes that reflected her teaching philosophy: fun and high energy. Her approach makes learning a joy, and her enthusiasm for culinary instruction shines through in every class she teaches. Her dedication to culinary education is evident in her ability to connect both amateur and professional chefs with the ingredients and the joy of cooking.

Now moving into a new role as the Arb Culinary Lead, Beth will take on the revamping of the Arboretum's restaurant, RootStock, set to open at the end of July!


Chef Shelagh Mullen recently took on the role of Culinary Program Lead at the Farm at the Arb, where she will coordinate cooking classes, develop recipes, and continue the exceptional work started by Beth Fisher. With a rich background in culinary instruction, event planning, and recipe development, Shelagh is well-prepared for this new chapter.

She curates recipes for her website, shecooksdesign.com, and holds a degree in graphic design, which she utilizes in collaboration with local producers and makers on food packaging projects. Shelagh calls herself a food designer, reflecting her belief that food is central to both business and life.

Shelagh is particularly passionate about Irish food and culture, having traveled to Ireland numerous times and completed a culinary course at The Dublin Cookery School in 2020. Her mission is to dispel myths about Irish cuisine and showcase the vibrant Renaissance in Irish food and cooking. In pursuit of this goal, Shelagh co-founded GráBia with her friend Anne from Galway. GráBia is an annual food tour of Ireland that offers participants a deep dive into the country’s culinary landscape, including cheese making, dairy farm visits, sea foraging, whiskey tours, and so much more. Shelagh is excited to share her love for Irish food and culture with others through these immersive experiences.



Together, these two incredible culinary experts will collaborate to curate signature dishes for the Arb restaurant and teach in the Farm at the Arb kitchen, all while using the bounty from the foodscape right outside the kitchen doors!

Sample a delicious garlic confit, Kernza, and other vegetables and herbs from the farm. We will close out the morning with a guided farm tour led by Beth and Shelagh.

Parking: There is a large parking lot on site.
