We will be hosted by Alicia Hinze, Owner & Pastry Chef of The Buttered Tin, and Emily Coborn Wright, President of Coborn’s Inc., along with the incredible women who helped bring this concept to life.
Meet Our Host: Emily Coborn Wright
Emily Coborn Wright is President at St. Cloud, MN-based Coborn’s Inc., an employee-owned independent grocery retail company operating more than 135 retail locations throughout the upper Midwest. Emily and her brother Peter represent the fifth generation of the Coborn family to join the company.
Previous roles Emily has held include SVP of Growth Initiatives, SVP of Retail Support Services, Vice President of Operations Eastern Region, Vice President of Fresh Merchandising, District Manager, Director of Topco Program Management, and Communications Manager. Before joining Coborn’s in April 2011, Emily worked at UNFI.
Emily is a graduate of Carlson School of Management at the University of Minnesota with a Master’s in Business Administration and a graduate of College of St. Benedict with bachelor’s degrees in Communications and Spanish. She serves on the Board of Coborn Family Foundation and Coborn’s CARES Fund.
She resides in St. Cloud, MN with her husband Tobin and daughter Livvy.
Meet Our Host: Alicia Hinze
You may have sampled Alicia Hinze’s delectable desserts at the 2018 James Beard Foundation Gala, where guests were treated to her miniature orange Bundt cakes with elderflower glaze, lime meringues and browned-butter peach hand pies. Alicia put on full display the French pastry training she received at Le Cordon Bleu’s Patisserie and Baking Program. Her skills creating elaborate wedding desserts and cake decorations have led to work for Martha Stewart’s Wedding Magazines’ Contributing Editor Wendy Kromer. The Food Network invited her to compete on its hit show Cupcake Wars several times with competition-winning results.
Alicia opened The Buttered Tin in 2013 in Lowertown, St. Paul, Minnesota. This neighborhood gem of a bakery and café has been named “Best Breakfast Spot” by City Pages, “Best Pie in 50 States” by Mental Floss, “Best French Toast (Banana Foster)” by Mpls-St.Paul Magazine, and “Best Breakfast “ in a Mpls-St.Paul Magazine Readers Poll Award, and “Best Breakfast” in Saint Paul Magazine, one of the “Top 5 Brunch Spots in the Twin Cities” by Artful Living Magazine, a Lender Small Business Excellence
Award from the Community Reinvestment Fund, as well as always appearing on top of Twin Cities lists for places to visit in Eater and Trip Advisor.
Feeling the love for her elevated comfort food brand, Alicia opened The Buttered Tin in Northeast Minneapolis in 2021, and it has quickly been adopted as a neighborhood staple.
Most recently The Buttered Tin has partnered with a local grocer giant, Coborn’s, to open their inaugural concept of Market & Table with a full Buttered Tin inside.
Alicia loves spreading happiness through food, while actively demonstrating her love of the planet. She places an emphasis on sustainability in all phases of her restaurant operations. The Buttered Tin recycles and collects organics in-house, and exclusively provides compostable and recyclable take-out ware. A proud fellowship student in the inaugural James Beard Foundation’s Women Entrepreneurial Leadership program, Alicia strongly values supporting her staff and other women in the restaurant industry.

Macey Brickweg, Kristine Holthusen, and Megan Stevens
Macey Brickweg is a Registered Dietitian and the Health and Nutrition Program Manager at Coborn's Inc., where she focuses on making balanced nutrition feel realistic, approachable, and easy to apply in everyday life for shoppers. Her work centers on translating nutrition science into simple, practical guidance, while connecting it to the foods people actually buy and love. She supports recipe, product and content development, helping people build confidence and find balance in both the grocery aisle and the kitchen. She is especially passionate about a balanced approach to eating, one that supports health while still following an "all foods fit" approach.
Leading the Plymouth store is Kristine Holthusen, a seasoned Coborn’s leader known for her thoughtful approach, passion for fresh food, and commitment to creating stores where both guests and team members feel welcomed and inspired. Since joining Coborn’s in 2014, Kristine has successfully opened and operated multiple locations, including the major remodel of our Otsego, MN, store in 2024 and the opening of our Buffalo, MN, store in 2021.
Megan Stevens is the Category Manager of Local Assortment at St. Cloud, MN-based Coborn’s Inc., an employee-owned independent grocery retail company operating more than 135 retail locations throughout the upper Midwest. Megan represents the company in local assortment across Center Store, Fresh and Liquor. Before joining Coborn’s in December, 2025, Megan worked at Target Corporation where she held a variety of roles in Strategy, Growth and Merchandising. Megan is a graduate of the University of Wisconsin – Stout with a degree in retail merchandising and management. She resides in Big Lake, MN with her husband Shelby, 2 year old daughter Peyton and 10 month old son Everett.
